Overnight Oats x 5
A little prep now means breakfast is one less thing to think about in the morning. Overnight oats are an easy, fibre-rich way to start the day, with plenty of room to add protein, healthy fats, fruit and whatever flavours you’re feeling.
Overnight Oats
3+ Plants
These ingredients make 1 serve overnights oats
Base:
¼ cup (3 tbsp) rolled oats
2 tbsp chia seeds
Milk of choice (about 3/4 cup)
Maple syrup, to taste (this will depend on your taste and topping choice)
Flavour ideas (measurements are a guide):
Apple - 2 tbsp grated apple, 2 tsp sultanas, 1 tbsp seeds*, pinch cinnamon
Carrot - 2 tbsp grated carrot, 2 tsp sultanas, 1 tbsp seeds*, pinch cinnamon
Chocolate - 1 tbsp cacao, 1 tbsp, peanut butter, 1 tbsp grated coconut, 1 tbsp seeds*
Banana - ½ banana (mashed or sliced), 1 tbsp peanut butter, 1 tbsp seeds*
Berries - ¼ cup fresh or frozen berries, 1 tbsp grated coconut, 1 tbsp seeds*
Instructions:
Add all the base ingredients into a jar. Tighten the lid and shake well.
Stir or shake in the ingredients for your chosen flavours. Pop the lid on and place in the fridge for at least an hour, or overnight.
For a more porridge-like consistency, add in a little extra milk or yoghurt prior to eating.
Add more plants:
Use a plant based milk such as soy, oat, coconut or almond.
* use whichever seeds or nuts you have, or a mixture for extra plant diversity - pumpkin, sunflower, flaxseed, hemp, almonds, etc.
Apples can be combined or swapped with fresh or stewed pears, rhubarb.
Swap or add a little grated zucchini to your grated carrot or apple.
Pureed pumpkin or sweet potato can be mixed in with the oats - add some spices like cinnamon, nutmeg, ginger, cardamom and vanilla to compliment the flavours.
Granola adds crunch and even more plants to your mix. Add in just before serving to preserve the texture.

Add a splash more milk in the morning if they’re too thick, or a little less next time if you prefer them firmer.
Add some more protein to the mix by adding in some cottage cheese yoghurt or even some silken tofu.
Protein powders or collagen powders work well mixed in for added flavour and a way to hide grainier protein textures if you’re not a fan.
Overnight oats keep well in the fridge for a few days, making them great to meal prep for the week ahead in just minutes.
If you’re avoiding oats, you can use other grains such as leftover cooked quinoa or brown rice, quinoa / millet / amaranth flakes, etc.
