Two Minute Tuna Salad
Did you eat lunch?!
Here’s something you can grab fast. This one comes together in about 2 minutes using simple pantry staples - tuna, mixed beans and a few extras, depending what you have and what you can muster. Protein, fibre and plenty of goodness, with almost no effort.
Two Minute Tuna Salad
12+ Plants
Small can tuna
Small can mixed beans, drained and rinsed
2 handfuls mixed salad greens
5-6 cherry tomatoes (halved if large)
½ cup chopped cucumber
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
Salt and pepper to taste
Instructions:
Add all the ingredients into a bowl or jar and stir (or shake) well to combine.
Add more plants:
Stir through some sauerkraut or your favourite ferment.
Squeeze in some ripe avocado.
Add some chopped spring onion or red onion
Sprinkle in some nuts and seeds.
Add some chopped mango in summer or pomegranate in autumn.
Drop in a dollop of tzatziki or hummus.
This is also great to use whatever you have growing in your garden, too. Leafy herbs and greens, nasturtium leaves or edible weeds.
Notes:
Use any protein you have on hand. Tuna is handy to keep in the pantry, but you can use any leftover meat, fish our poultry, cooked eggs, additional beans, some tofu or tempeh, your favourite cheese.
Work this recipe to your capacity… aware you’ve got a lot on the to do list coming up? Stock up on some combined tuna + bean mixes; greens gone soggy? Add some capsicum instead; Like the sweetness from the mango but it’s not in season? Add some dried fruit like currants or cranberries.
If you want to add some more flavour, play around with the flavours in your dressing - mustard, herbs and spices, nut or seed butters, miso, citrus juice, chilli oil… it’s all yours.
