5 Minute Noodles
This is our go-to “I need dinner in five minutes” noodle bowl… simple, flexible and much more nourishing than a packet. Built with frozen veg, leafy greens and a spoon of bone broth, it’s an easy way to sneak in protein, fibre and minerals with whatever you’ve got on hand. Add extras if you feel like it, or keep it basic… either way, you’re fed in five
Serves 1.
6+ Plants
1 serve noodles (ramen, rice, soba, etc)
Handful baby spinach, roughly chopped
2 tbsp frozen peas
2 tbsp frozen corn
2 tbsp frozen edamame
1-2 mushrooms, thinly sliced
1 spring onion, thinly sliced
1 heaped teaspoon concentrated or powdered bone broth (beef, chicken or vegetable)
Optional: soy sauce, sesame oil, garlic, ginger, shredded chicken, canned tuna, sliced tofu, chilli paste, shredded nori.
Instructions
1. Cook noodles according to packet instructions, add the frozen vegetables to the cooking water.
2. Meanwhile, boil the kettle with water for the broth, and prepare the vegetables.
3. Put all the vegetables in a serving bowl and drizzle with concentrated bone broth. Top with noodles, pour over 1.5 cups boiling water and stir well to dissolve the bone broth. Add any optional extras to your liking.
Add more plants:
· Add herbs such as coriander, basil, chives or parsley.
· Swap noodles for spiralised zucchini or carrot
· Add in additional shredded greens along with the spinach (keep in mind, they will only wilt with the heat of the boiling water, so shred thinly to allow them to cook quicker).
Notes:
· If creating a noodle jar to grab and go for work or school lunches, spoon the bone broth into a jar, top with vegetables, greens then the noodles. Pour boiling water over the top. Place the lid on and give a gentle shake to mix up the bone broth. Allow to sit for a couple of minutes before gently removing the lid.
