Leftover Makeover: Beef + Veggie Bolognese

Our Beef + Veggie Bolognese is a classic, family friendly recipe with endless personalities (hmmm… sounds a bit like myself). Cook once, enjoy over and over without getting bored, and pop the leftovers in your freezer for those days when you’re running on empty.

Swap your Base

  • Use wholemeal or pulse pasta, or zucchini noodles

  • Serve over baked potatoes or sweet potatoes

  • Use as a flavour base for risotto – then turn into arancini the next day by rolling into balls, dipping in egg, dredge in breadcrumbs and frying until golden!

Bake again

  • Turn your sauce into a lasagne with pasta sheets, veggie strips or alternating both (zucchini, eggplant, sweet potato, spinach, etc). Top with cheese or bechamel sauce

  • Make an eggplant parmigiana by layering grilled eggplant with the sauce and mozzarella cheese

  • Stir through some rice and use to stuff and bake capsicums

  • Top with mashed potato for a shepherds pie

Kid Friendly

  • Use instead of tomato paste for pizza bases (flat bread + Bolognese sauce + favourite toppings)

  • Instead of tomato paste for chicken or eggplant schnitzel / cutlets / cotoletti, swap for the sauce, top with cheese and grill until golden

  • Add an egg or two to leftover sauce and spaghetti and fry into fritters for lunchboxes
