Apple Pie Overnight Oats
Start your day with the cozy flavours of apple pie in a nutritious, no-cook breakfast. These creamy overnight oats combine rolled oats, fresh apple, your favourite milk, maple syrup, chia seeds, cinnamon, and a touch of vanilla for a naturally sweet and spiced treat. Perfect for busy mornings or meal prep, they’re as comforting as dessert but packed with goodness.

Apple Pie Overnight Oats
4+ Plants
1 cup rolled oats
1 cup grated apple
1.5 cups milk of choice
1-2 tsp maple syrup, or to taste
1 tsp vanilla extract
2 tsp chia seeds
1 tsp cinnamon
Pinch good quality salt
Instructions:
1. Place all the ingredients in a jar. Place the lid on tightly and shake well to combine.
2. Place in fridge for at least an hour, but overnight for best results, to allow the oats to soak up all the liquid.
3. You can eat straight from the fridge or pour into a pan to heat through over low heat on the stove for a warm porridge.
Add more plants:
· Add hemp seeds or a few sultanas to jar before shaking.
· Swap apple for pear or use both.
· Top with a layer of granola to serve for ‘Apple Crumble Overnight Oats’.
· Swap maple syrup for 1-2 pitted and chopped medjool dates.
· To serve, dollop on some peanut or nut butter and sprinkle with some seeds.
Notes:
· If you don’t tolerate oats, you can swap for leftover cooked quinoa or brown rice, or quinoa flakes.
· Great to give to kids or to use for baby led weaning. Choose a milk that you are comfortable with (considering your babies individual needs), dairy milk can also be used if you wish. The oats have a great texture for them to eat from a loaded spoon or use their hands, it’s rich in nutrients and a nice experience to offer a soft wholegrain texture.
